Spelt Pasta

For many years, I've been eating spelt pasta. (For those of you wondering, spelt is an ancient cousin of wheat). We all know that whole grain pasta is better for you, but the whole grain spelt pasta I would buy (VitaSpelt) tasted so awful. The taste was so strong that I could never use a light pasta sauce with subtle tones because it would get drowned out by the fibrous pasta taste.
A while ago, while browsing through the BuonItalia in Chelsea Market in NYC, I found an organic spelt pasta and thought I'd give it a try. I have never eaten another type of pasta since. It is whole grain, but you'd never know just by tasting it. The flavors are so complex but subtle at the same time. Even my husband fell in love with it ! Now that I don't live in NYC anymore, I order it online and have it shipped to me. You can find the link to the store on the left hand side of the blog.
