Merguez Sausage


One thing I miss eating since I've been living in the US (Ok, one of the many things) is merguez. It is a North African spicy red sausage, usually made with lamb or beef. It's flavored with a multitude of spices: sumac, paprika, cayenne pepper, and a harissa chili paste. I haven't found it in the US, but its likely there are some Moroccan Restaurants that serve it somewhere. Mmmmm.......

Can you not concoct it yourself? Add the spices?

It's possible to make your own sausage, you just need some type of recipe or time to experiment to get the right flavor. I haven't ever made my own sausage before, but I will definitely post a recipe if I do get around to it :)
