A Simple Duck au Vin
This is a simple and elegant way to serve duck. I make the sauce ahead of time and freeze it in ice cub molds so that I can readily have access to a nice sauce when I need it. In this recipe, the bold spice cloves add to the wine sauce is a wonderful complement to the wild game taste of duck. This recipe serves 4.
Ingredients:
Preheat your oven to 350 degrees F. To make the sauce, add cloves, a pinch of salt, and a a pinch of pepper to wine and heat over medium heat in a pot. Keep heating until the sauce has reduced by half. Place the duck legs in a baking dish. Sprinkle a pinch of salt and ground pepper over the duck legs and and pour 1 cup of sauce (or 8 cubes of your frozen sauce) over the duck. Add an equal amount of water and cook in oven for 30-40 minutes.
If you like your duck very tender, consider cooking in a slow cooker for 5 hours or lowering the temperature in the oven and cooking for a couple of hours.
