Recipe: Grilled halloumi and melon


This is a Middle Eastern recipe that works great as a starter, a breakfast or brunch dish, and, if you like to eat cheese for dessert, a dessert. I will warn you, though, that this is neither a low-fat or low-sugar dish, but boy does it taste good! The halloumi cheese is slightly salty and has a chewy texture, while the melon is soft and sweet. A perfect match. Halloumi cheese is unique in the sense that it doesn't melt, so is perfect for a dish like this.

This is a recipe for one big breakfast. You can typically buy halloumi cheese from a Middle Eastern grocer, but big supermarkets should also carry the cheese.

Ingredients:


  • 200 g halloumi cheese
  • Half of a small honeydew melon or cantaloupe, sliced
  • Olive oil

Instructions:

You can grill the cheese either on a grill pan on the stove, on an actual grill, or using the grill function in your oven. I follow the first option, and I make sure to slather some olive oil on the pan to ensure the cheese doesn't stick (but not so much that you're frying the cheese in the oil). Grill each side for about 3 minutes on medium-high heat. If the cheese starts to stick to the pan, add more oil. Serve the cheese and melon together.
