Ice Cream Displays

This past weekend, I was walking around Taksim Square in Istanbul at night and noticed that the men manning ice cream stands were all performing a similar ritual:




I haven't seen this done anywhere else, but I bet they do this to: 1) Impress tourists and 2) Incorporate extra air into the ice cream. The more air you incorporate into ice cream, the creamier and fluffier it becomes. You can find these places walking along Istiklal Caddesi in the Taksim Square area. This area is also filled with cafes and shopping.
