Watermelon, Feta and Mint Salad

Last night I was inspired by our mini (and brief) heat-wave to serve this heat busting salad. It feeds four as a side salad and two as a big salad.

Ingredients:

-4 to 5 slices watermelon, chopped into cubes
-8 small cubes of feta (sheep's milk feta preferred)
-Half a red onion, chopped finely
-A fistful of fresh mint, chopped finely
-Extra Virgin Olive Oil
-Balsamic vinegar

Instructions:

Combine the watermelon, feta, onion, and mint in a salad bowl. If omitting the feta, add a pinch of salt. Pour a generous amount of olive oil and then a small amount (about a tablespoon) of balsamic vinegar into the salad bowl. Mix and serve.

Hi,
The feta and watermelon has been quite well-known in the Balkans for ages. The onion, oil and esp. vinegar is a bit too much, no?
